After reading my new "Culture" magazine, which is all about cheese and highly recommended...

I noticed an article on a chef who remembered Limburger from the 70s, but couldn't find it anywhere.... I found some 'Amish' local Limburger and took it home for my first try.
Ok, strap in for the smell... its funky to say the least... it makes the fridge smell like sweat socks, and the trash, and the dishwasher... but the flavor is worth it. It would be a brie sort of texture with very much more body and a realy mushroom sort of flavor. Its like morels and a nice blue cheese mixed in with brie. Just be prepared for the smell....!

Just enjoy mushrooms, and bluecheese and brie! and forget the stinky socks.

I grew up with Limburger. My mother loved it. But you are right - it stinks. Not my cup of tea, but she is 75 and still enjoys it.
